Making Syrups

Herbs syrups make good remedies for giving to children. They also improve the flavor of bitter herbs such as Motherwort and Vervain.

Begin by placing 1 1/4 pounds sugar or honey in a pan and adding 4 cups of water.

Heat gently while stirring, to dissolve the sugar or honey.

Then add 5 ounces plant material and stir over low heat for 5 minutes.

Next, turn off the heat and let steep overnight.

Strain out the plant material and store in an airtight container for future use. The sugar acts as a preservative, so a herb syrup will keep for 18 months.
