Making Teas



Herbal teas are also called infusions or tisanes and are a simple and delicious way of extracting the goodness and flavor from the aerial parts of herbs. You can use either fresh or dried herbs to make a tea (use twice as much fresh plant material as dried). If you find the taste of some herb teas bitter, they can be sweetened with a little honey or flavored by stirring with a licorice stick or adding slices of fresh ginger.


Place your chosen herb or herbs into a pot or cup. A standard strength tea is made with 1 teaspoon dried or 2 teaspoons fresh herb to each cup of water.

Add boiling water, cover with a lid and let steep for 10 - 15 minutes.

Strain and drink as required. Teas can be drunk hot or cold, and they can be reheated.

Teas will keep in the fridge in a covered container for up to 24 hours.

Herb teas can also be made in a cafetiere. Simply fill the cafetiere with the fresh or dried herbs and add boiling water. Allow to steep for 10 - 15 minutes before pressing down the plunger.
